I didn't pick any special levels I started with 1-1 and got the achievements when I made it to 2-10. It usually took me 2-3 Falcons for me to get 100% so I would say 150 Falcons is a good estimate on how many you need.

I did this to keep track of what levels I had failed 3 times to earn a beacon because it seems you can only get 1 beacon per level. After finishing all the levels and getting all 3 stars on Tatooine I had 70-80 Millennium Falcons then I started on 1-1 and failed it 3 times, then moved on to 1-2 failed it 3 times, etc. You have a limited number of beacons and you earn them by earning new stars and by failing a level three times in a row.
